Before turning to different ways to reduce urban water demand, in this chapter we’ll get better acquainted with patterns of water use in the commercial, industrial and institutional (CII) sectors. These sectors together account for the majority of urban water uses and respond to quite different incentives than do people in homes and apartments. Sydney is home to one of Australia’s major responses to its continuing drought — new desalination plants to provide water to major cities.
