This chapter describes the way chain stores are reluctant to establish or to continue serving low-income neighbourhoods, forcing residents to live in "food deserts", a mile for more from the nearest grocery store. The author maintains that food co-ops can solve more than just food access as they are also part of a social justice movement. The private equity firm model of buying struggling businesses in order to benefit the firm is described, along with succesful food co-ops, and ones that have failed.
